Mornings rarely go according to plan. Alarms get snoozed, lunches need packing, someone cannot find a shoe, and breakfast becomes whatever is fastest. Overnight oats solve that problem by moving the work to the night before. You stir rolled oats, milk, yogurt and chia seeds together in a jar, leave it in the refrigerator, and by morning the oats have softened into a creamy, pudding-like breakfast that needs nothing but a spoon.
This recipe gives you a reliable base formula and five flavor variations so you never tire of it: berry vanilla, peanut butter banana, apple cinnamon, chocolate cherry and tropical mango coconut. The base uses equal parts oats and milk, a scoop of Greek yogurt for creaminess and protein, and a spoonful of chia seeds for body. Each jar contains about 12 to 18 grams of protein and 6 to 9 grams of fiber, which helps keep you full until lunch.
It is also one of the easiest meal-prep recipes there is, since jars keep well for up to four days in the refrigerator. You can make all five flavors on Sunday evening in about ten minutes and have a different breakfast for each workday. Read on for the ratios, the science behind why it works, and the small tweaks that let you customize the texture and sweetness to your taste.
Why this recipe works
Overnight oats are simple, but a few principles make the difference between a creamy jar and a gluey or watery one.
- The right ratio. Equal volumes of rolled oats and liquid (here milk plus yogurt) give a soft but still slightly chewy texture. More liquid makes it soupy, and less makes it stiff.
- Old-fashioned rolled oats. They absorb liquid slowly and keep their shape. Instant oats turn mushy, and steel-cut oats stay too firm without cooking.
- Chia seeds. They swell and form a gel that thickens the mixture and keeps it from separating.
- Yogurt. It adds protein, tang and a creamy, spoonable texture that milk alone cannot provide.
- Time. Four hours is the minimum; eight to twelve hours gives the creamiest result.
The base formula
For each jar, combine ½ cup (45 g) old-fashioned rolled oats, ½ cup (120 ml) milk of your choice, ¼ cup (60 g) plain Greek yogurt, 1 tablespoon chia seeds, 1 teaspoon maple syrup or honey, a pinch of salt and ¼ teaspoon vanilla. Stir until no dry pockets remain, cover, and refrigerate. That is it. Every variation below starts from this mixture and adds flavor ingredients either before chilling or as toppings in the morning.
Any milk works: dairy, oat, almond or soy. For a vegan jar, swap in a thick plant-based yogurt. If you like a looser texture, add a splash more milk in the morning and stir.
The five flavors
- Berry vanilla. Stir ½ cup of mashed raspberries or blueberries into the base and top with a few whole berries.
- Peanut butter banana. Whisk 1 tablespoon of peanut butter into the milk, then top with sliced banana and a sprinkle of chopped peanuts.
- Apple cinnamon. Add ½ teaspoon cinnamon and ½ grated apple to the base. Top with chopped walnuts.
- Chocolate cherry. Mix 1 tablespoon of unsweetened cocoa powder into the base and top with pitted cherries and a few dark chocolate shavings.
- Tropical mango coconut. Use coconut milk in the base, add ¼ cup of diced mango and top with toasted coconut flakes and lime zest.
Tips & variations
- Use jars with lids. Half-pint or 12-ounce (350 ml) mason jars work well for portability.
- Add toppings in the morning. Crunchy toppings such as nuts, granola and seeds stay crisp if added right before eating. Fresh bananas brown if they sit overnight, so slice them in the morning.
- Adjust sweetness. Start with one teaspoon of maple syrup and add more to taste. Ripe fruit adds natural sweetness.
- Serve warm. Microwave a jar, without a metal lid, for 60 to 90 seconds for a cozy bowl on cold mornings.
- Boost the protein. Stir in a scoop of unflavored or vanilla protein powder along with a little extra milk.
Nutrition and customizing for your goals
One of the nicest things about overnight oats is how easy they are to tailor. Rolled oats are a whole grain rich in beta-glucan, a type of soluble fiber that helps you feel full, and the chia seeds add more fiber along with omega-3 fatty acids. The yogurt contributes protein and calcium. Together they make a breakfast that digests slowly and sustains energy through the morning.
If you want more protein, increase the Greek yogurt to ½ cup or stir in a scoop of protein powder with an extra splash of milk. For a lower-sugar version, skip the maple syrup and rely on ripe banana, mashed berries or a little cinnamon for sweetness. For more healthy fats and crunch, top the jar with a tablespoon of chopped nuts, pumpkin seeds or ground flaxseed. If you need the jars to be dairy-free, choose a thick coconut or soy yogurt and an unsweetened plant milk.
Packing these into a lunch bag is easy as well: keep the jar upright in an insulated pouch with a small ice pack, and they stay cold until you are ready to eat. Finally, remember that the texture continues to thicken over a day or two, so if your jar seems too dense, simply stir in a splash of milk before eating.
Storage
Sealed jars keep in the refrigerator for up to four days. Jars with fresh fruit mixed in are best eaten within two to three days, while jars with just the base can go the full four. We do not recommend freezing overnight oats made with yogurt and fruit, because the texture becomes watery on thawing. If you are prepping for the week, keep the toppings in a separate container and add them each morning.

Frequently asked questions
Can I use instant or steel-cut oats?
Old-fashioned rolled oats give the best texture. Instant oats become mushy, and steel-cut oats remain too firm without cooking.
Do I eat overnight oats hot or cold?
Either. They are traditionally eaten cold, but you can warm them in the microwave for 60 to 90 seconds.
How long do overnight oats last?
Up to four days in a sealed container in the refrigerator. Jars with fresh fruit are best within two to three days.
Can I make them vegan?
Yes. Use a plant-based milk and a thick dairy-free yogurt, and maple syrup instead of honey.
