Shawarma is one of the great street foods of the Middle East: thin slices of marinated meat, traditionally stacked on a vertical spit, roasted slowly and shaved off in fragrant ribbons to be served in flatbread with pickles, vegetables and sauces. Few of us have a vertical rotisserie at home, but you can capture most of what makes shawarma so craveable with a good spice blend, a bold marinade and a hot oven. This bowl version takes all those flavors and arranges them over fluffy rice with crunchy vegetables and a cooling garlic yogurt sauce.

The chicken is the centerpiece. Boneless, skinless thighs are marinated in olive oil, lemon juice, garlic and a warm mix of cumin, paprika, coriander, turmeric, cinnamon and allspice. Thigh meat stays juicy even when the edges char in a hot oven, which is what gives shawarma its signature crisp, caramelized bits. Sliced thinly and piled on rice, it is easy to see why this has become a favorite meal-prep dinner.

Everything else is optional but makes the bowl feel complete: a garlicky yogurt sauce, a quick salad of cucumber, tomato and red onion, pickled turnips or pickles, hummus, warm pita and fresh herbs. You can serve the components separately for a build-your-own dinner, or pack them into containers for lunches through the week. The details below will help you get the most from each part.

Why this recipe works

Restaurant shawarma depends on high heat, a strong marinade and thin slicing. We recreate those conditions in a home kitchen.

  • Bone-in flavor without the bone. Boneless thighs have more fat and connective tissue than breasts, so they stay tender and forgiving at high heat.
  • A balanced marinade. Lemon juice tenderizes lightly, oil carries the fat-soluble flavors of the spices, and salt seasons the meat throughout. Too much acid makes chicken mushy, so we use just enough.
  • A very hot oven. Roasting at 425°F (220°C) browns and chars the edges quickly, mimicking the heat of a rotisserie.
  • Cooling contrast. Tangy garlic yogurt and a fresh, acidic salad balance the rich, spiced chicken so every bite tastes bright.

The spice blend

Shawarma spice mixes vary from family to family and region to region, but most share a core of cumin, coriander, paprika and turmeric, rounded out with warm spices such as cinnamon, allspice and cardamom. Our blend uses cumin, sweet paprika, coriander, turmeric, cinnamon, allspice and a pinch of cayenne. You can mix a larger batch and store it in a jar for up to six months; use about 2 tablespoons per 2 pounds of chicken.

If you only have a few of these spices, prioritize cumin, paprika and coriander; they provide the backbone. Toasting whole cumin and coriander seeds in a dry skillet and grinding them yourself produces a noticeably more aromatic mix, though ground spices work perfectly well.

Ingredient notes

Chicken thighs. Trim any large pieces of fat and cut thighs that are very large in half so they cook evenly. Chicken breasts can be used, but reduce the roasting time by 5 minutes and pull them at 160°F (71°C), as they dry out quickly.

Yogurt. Plain whole-milk Greek yogurt makes a thick sauce. Thin it with a tablespoon of water or lemon juice until drizzleable. For a dairy-free option, use an unsweetened coconut or soy yogurt, or substitute tahini thinned with lemon and water.

Rice. Basmati rice is traditional and cooks up fluffy and fragrant. Rinse it until the water runs clear, then cook with 1¼ cups of water per cup of rice. A pinch of turmeric and a small knob of butter turn it golden.

Vegetables and toppings. Diced cucumber, tomatoes, red onion, parsley and mint dressed with lemon juice, olive oil and salt make the simplest salad. Add pickled turnips, hummus, feta, olives or sliced pickled red cabbage if you like.

Tips & variations

  • Marinate longer. Thirty minutes is enough, but 4 to 12 hours in the refrigerator deepens the flavor. Do not marinate beyond 24 hours, as the acid starts to break down the texture.
  • Use the broiler. For extra char, broil the chicken for the last 2 to 3 minutes of cooking, watching closely.
  • Cook on the stovetop. Sear the chicken in a hot cast-iron skillet, 4 to 5 minutes per side, until deeply browned and cooked to 175°F (80°C).
  • Grill it. Grill over medium-high heat for 5 to 6 minutes per side for a smoky version.
  • Make a wrap. Pile the chicken, salad and sauce onto warm pita or flatbread instead of rice.
  • Slice thin. Rest the chicken for 5 minutes, then slice it across the grain into thin strips for the classic shawarma texture.

Building the perfect bowl

A shawarma bowl is really about contrast: warm against cool, soft against crunchy, rich against sharp. Start with a base of rice or another grain such as bulgur, couscous or quinoa. Add the sliced chicken while it is still warm, then pile on cool, crisp vegetables so their freshness offsets the spiced meat. Finish with the garlic yogurt sauce, a spoonful of hummus and something pickled, because acidity is what makes each bite feel balanced instead of heavy.

If you want to stretch the recipe, add a handful of chickpeas roasted alongside the chicken on the same pan, a scoop of tabbouleh, or a few slices of avocado. For a lower-carbohydrate meal, replace the rice with shredded romaine and cauliflower rice. Leftover chicken also turns into excellent wraps the next day: warm a pita, spread it with hummus, and roll it up with the chicken, salad and sauce. Whichever way you serve it, finish with a squeeze of lemon and a sprinkle of sumac if you have it.

Storage & meal prep

Store the components separately in airtight containers: chicken, rice, salad and sauce. The chicken and rice keep for up to four days in the refrigerator, while the salad is best within two days and the garlic sauce lasts about five. Reheat chicken and rice in the microwave for 1 to 2 minutes until hot, and add the salad and sauce cold after reheating. Cooked chicken also freezes well for up to three months; thaw overnight in the refrigerator.

Ingredients

Chicken and marinade

  • 2 lb (900 g) boneless, skinless chicken thighs
  • ¼ cup (60 ml) olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 tbsp ground cumin
  • 2 tsp sweet paprika
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • ½ tsp ground cinnamon
  • ½ tsp ground allspice
  • ¼ tsp cayenne pepper
  • 1½ tsp kosher salt
  • ½ tsp black pepper

Garlic yogurt sauce

  • 1 cup (240 g) plain whole-milk Greek yogurt
  • 1 small garlic clove, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • 1 tbsp chopped fresh dill or mint (optional)

Rice and salad

  • 1½ cups (300 g) basmati rice, rinsed
  • 2 Persian or 1 English cucumber, diced
  • 2 medium tomatoes, diced
  • ¼ red onion, thinly sliced
  • 2 tbsp chopped parsley
  • 1 tbsp lemon juice and 1 tbsp olive oil
  • Warm pita, hummus and pickles, to serve (optional)

Instructions

  1. Marinate. Whisk the oil, lemon juice, garlic, all the spices, salt and pepper in a large bowl. Add the chicken and toss until coated. Cover and refrigerate for at least 30 minutes, or up to 12 hours.
  2. Heat the oven. Place a rack in the upper third of the oven and heat to 425°F (220°C). Line a rimmed baking sheet with parchment or foil.
  3. Cook the rice. Cook the basmati with 1¼ cups (300 ml) water per cup of rice and a pinch of salt according to package directions, then fluff with a fork.
  4. Make the sauce. Stir the yogurt, garlic, lemon juice, olive oil, salt and herbs together. Thin with 1 tablespoon of water if needed. Refrigerate.
  5. Roast the chicken. Spread the chicken in a single layer on the baking sheet, leaving space between pieces. Roast for 20 to 25 minutes, turning once halfway, until charred at the edges and a thermometer reads 175°F (80°C).
  6. Make the salad. Toss the cucumber, tomatoes, red onion and parsley with the lemon juice, olive oil and a pinch of salt.
  7. Rest and slice. Rest the chicken 5 minutes, then slice it thinly across the grain.
  8. Assemble. Divide the rice among four bowls. Top with chicken, salad and a generous drizzle of garlic yogurt sauce. Serve with pita, hummus and pickles.

Notes

For meal prep, keep the salad and sauce separate until serving. Chicken reaches a safe 165°F (74°C), but thighs taste best at 175°F (80°C). Not suitable for a dairy-free diet unless the yogurt is substituted.

Frequently asked questions

Can I use chicken breast?

Yes, though thighs are juicier. If using breast, slice it into thinner cutlets, reduce roasting time, and remove it at 160°F (71°C) to allow for carryover cooking.

How long should I marinate the chicken?

At least 30 minutes. For the best flavor, marinate for 4 to 12 hours, but no more than 24.

Can I make shawarma in an air fryer?

Yes. Cook the marinated chicken at 400°F (200°C) for 12 to 15 minutes, turning once, until it reaches 175°F (80°C).

Is shawarma spicy?

It is warmly spiced rather than hot. The cayenne is optional, and you can serve hot sauce on the side.
